Wine maker notes

Grapes harvested at the beginning of April, originating from a selected vineyard in the Western foothills of the Coastal Mountain range; of low yield, providing a strong thermal moderation that combined with the soil texture favors slow maturity, thus, obtaining the maximum aromatic expression from a mature fruit basis.

Harvest: Fourth week of February. pH: 3,24 Acidity: 6,38 (Tartaric acid) Alc./vol.: 13,9 % v/v Residual Sugar: 1,92 g/l.

Food pairing

Seafood, crab, king crab, big oysters, and seasoned fish. It is interesting to taste it with pastas with sweet basil sauce.
